Ham and Cheese Quiche Ingredients

  • Pastry: Use our homemade pastry recipe for this quiche recipe. We'll walk you through how to properly put it in the slow cooker.
  • Cheese: Choose your favorite shredded cheese. Our Test Kitchen recommends either cheddar, Swiss, or provolone. For the creamiest texture, buy a block of cheese and shred it yourself.
  • Ham: This is a great recipe to use up leftover ham. Dice it into small pieces. If you don't have leftover ham, you can use chopped deli ham or a cut up ham steak.
  • Veggies: Flavor the quiche filling with roasted red peppers and sliced green onion.
  • Eggs: You'll need just four lightly beaten eggs for this ham and cheese quiche.
  • Dairy: We tested this recipe with half-and-half, but you can also use milk.
  • Flour: A little all-purpose flour helps the filling set up as it cooks.
  • Pepper: The only seasoning we're using is a touch of black pepper. We found the ham was salty enough but feel free to add salt if you'd prefer.

How to Make Ham and Cheese Quiche in the Slow Cooker

If you're looking for a low-effort brunch recipe that's perfect for busy weekends or easy entertaining, try this slow cooker quiche. Here's a high-level view of how to make it.

  1. Prep your slow cooker and prepare the pastry dough. Roll the dough and place it between layers of foil. Cook for one hour.
  2. Make the filling and pour it into the precooked crust.
  3. Slow cook for a few hours and let stand for 30 minutes. Slice and serve with fresh fruit.

Ingredients

  • Nonstick cooking spray

  • 1 recipe Homemade Pastry

  • 1 ½ cup shredded cheddar, Swiss, and/or provolone cheese (6 oz.)

  • 1 tablespoon all-purpose flour

  • ¾ cup diced cooked ham

  • ¼ cup chopped roasted red sweet pepper

  • ¼ cup sliced green onions

  • 4 eggs, lightly beaten

  • 1 ½ cup half-and-half or milk

  • ¼ teaspoon black pepper

Homemade Pastry

  • 1 ½ cup all-purpose flour

  • ½ teaspoon salt

  • ¼ cup shortening

  • ¼ cup butter, cut up, or shortening

  • ¼ cup cold water

Directions

  1. Line a 6-qt. oval slow cooker with foil. Coat foil with cooking spray; remove foil liner from cooker. Prepare Homemade Pastry. On a lightly floured surface, roll pastry into a 14x11-inch oval. Transfer to foil liner and return to cooker.

  2. Cover and cook on high 1 hour. Remove top sheet of foil. Fold down top edges of pastry to make an even crust that extends 1 1/2 inches up the sides. Coat a second sheet of foil with cooking spray and fit, coated side down, into crust (this will help hold up sides of pastry). Cover; cook on high 1 hour. Remove top foil.

  3. In a medium bowl toss together cheese and flour; spread into crust. Top with ham, roasted pepper, and green onions. In same bowl combine remaining ingredients. Pour over mixture in crust.

  4. Cover and cook on high 3 to 3 1/2 hours more or until a knife comes out clean, giving crockery liner a half-turn halfway through if possible. Turn off cooker. If possible, remove crockery liner from cooker. Let stand, uncovered, 30 minutes before serving.

Homemade Pastry

  1. In a bowl stir together flour and salt. Using a pastry blender, cut in shortening and butter until pea size. Sprinkle 1 tablespoon of the water over part of the mixture; toss with a fork. Push moistened pastry to side of bowl. Repeat moistening flour, gradually adding water until dough begins to come together. Gather it into a ball, kneading gently until it holds together.
